Dark Chocolate
Lydgate Farms 70% Dark Chocolate is deeply fudgey with a velvety mouthfeel. This chocolate is rich with a depth of flavor that will reveal hazelnut praline, chocolate covered cherry, berry, fruit and tobacco flower notes. Want even more flavor? Koloa Rum Bar
Lydgate Farms has partnered with Kauai’s own Koloa Rum to create a chocolate bar with a symphony of Kauai flavor and depth. Our single-origin cacao nibs are steeped in Koloa Rum for up to 18 days to create Koloa Rum’s signature Kauai Cacao Rum. Once the Cacao Rum has steeped, the rum-infused beans are returned to Lydgate Farm and refined with organic cane sugar to produce this 75% Dark Chocolate with Koloa Hawaiian Rum Bar*.
This completely Kauai-made chocolate bar is a must-try. The characteristic, warm, nutty, and caramel notes of gold rum are absorbed by Lydgate cacao in the rum-making process and make an exquisite pair with the bright, florals notes in our extra smooth dark chocolate. If you’re new to the world of bean to bar chocolate, Lydgate Farms Dark Milk Chocolate is unlike any milk chocolate you’ve tasted. With a rich, silken texture and flavor notes of sweetened condensed milk, browned butter and toasted cashew, Lydgate Farms 50% Milk Chocolate is everything chocolate lovers crave without any unwanted additives.
Made from 50% Lydgate Farms Kauai-grown cacao and 20% organic milk powder, this luscious bar has more chocolate in it than most commercially available dark chocolate and just 30% organic cane sugar, the same as Lydgate Farms Dark Chocolate. You won’t find anything artificial here – just Hawaiian-grown chocolate, organic milk powder from Humboldt Creamery and pure organic cane sugar. With intense creaminess and a heavy mouthfeel this chocolate pairs perfectly with a light and crisp champagne or prosecco. Exotic, rare, and exceedingly fragrant, Lydgate Farms vanilla beans are hand-pollinated and harvested from our 46-acre farm nestled between the Nounou Mountain range and Mt. Waialeale on Kauai’s east side. Our Grade-A, single-estate vanilla beans are sought-after for their exceptional size, flavor, and quality.
Once cured, this heirloom vanilla has a soft and pleasant aroma and a sweet, floral flavor. Vanilla beans are available in packs of 1, 3, or in our DIY Vanilla Extract kit, which comes with a recipe book and everything you need to make Hawaiian Vanilla extract at home. Caramélia Pearls are a Lydgate Farms Tour Favorite. Our visitors kept asking for these little crunchy, chocolate pearls from our comparative tasting on tour to be made available for purchase. Our Cacao Nectar Jelly is made from the rare Miel de Cacao, the juice drippings from the white fruit from around the cacao bean.
